Ingredients
- Marinated Onions:
- 3 red onions thinly sliced
- 1-1/4 cups fresh orange juice
- 3/4 cup fresh lime juice
- 1-1/2 teaspoons salt
- 1/2 teaspoon ground black pepper
- Pork,
- 2 3.5 oz. packages achiote paste
- 3/4 cup fresh orange juice
- 1/4 cup fresh lime juice
- 1 lb. tomatoes halved, seeded and coarsely chopped
- 2-2/3 cups chopped white onions
- 2-2/3 cups chopped red onions
- 8 large garlic cloves chopped
- 2 tablespoons dried Mexican oregano
- 1 tablespoon salt
- 1 teaspoon minced seeded habanera chile
- 1/2 teaspoon black pepper
- Freshly cooked white rice
- 1-3 lb. boneless pork butt, trimmed cut into 1” pieces 1-4 foot long fresh banana leaf

Step 1
Marinated Onions:
Mix all ingredients in large bowl. Cover and refrigerate overnight stirring occasionally. Drain before serving over pork.
Pork,
Mix first 3 ingredients in large bowl. Add tomatoes and next 7 ingredients. Mix in pork. Cover and refrigerate overnight. Preheat oven to 375 degrees. Lay banana leaf lengthwise in 15x10x2” glass baking dish overlapping short sides. Add pork mixture. Fold banana leaf to cover pork. Cover dish with foil. Roast pork 1 hour 15 minutes. Stir then cover again and continue cooking until pork is very tender, about 1 hour 15 minutes longer. Remove foil, pull back leaf.
