Peruvian Tabouli

Ingredients

  • 1 cup uncooked quinoa, prepare according to directions
  • 1 avocado, peeled and cubed
  • 1 red bell pepper, cut into small pieces
  • 1 can black beans
  • 1 can corn
  • 4 oz cotija cheese
  • 8 or so Kalamata olives, chopped
  • 1/2 cup chopped cilantro
  • lime zest and juice of 1 lime
  • Olive oil ( 1/4 – 1/2 cup)

Step 1


Combine first 9 ingredients. Add olive oil to desired consistency.
