Ingredients
- 1 cup uncooked quinoa, prepare according to directions
- 1 avocado, peeled and cubed
- 1 red bell pepper, cut into small pieces
- 1 can black beans
- 1 can corn
- 4 oz cotija cheese
- 8 or so Kalamata olives, chopped
- 1/2 cup chopped cilantro
- lime zest and juice of 1 lime
- Olive oil ( 1/4 – 1/2 cup)

Step 1
Combine first 9 ingredients. Add olive oil to desired consistency.
