Ingredients
- 1 cup unblanched almonds
- 2-1/2 cups all-purpose flour
- 1 cup sugar
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 2 sticks unsalted butter melted and cooled
Preparation
Step 1
Preheat oven to 350 degrees. Butter a 10” tart pan with removable bottom or a 9” pie pan. Place almonds in a food processor and pulse repeatedly until they are coarsely ground, the pieces should be no larger than 1/8 inch. In medium bowl, combine flour, sugar and salt. Stir in ground almonds. Stir vanilla into melted butter and add to dry ingredients. Stir with rubber spatula until evenly incorporated. Rub mixture between the palms of your hands to make crumbs no larger than 1/4”.
Scatter 3/4 of the crumbs in prepared pan and press very lightly with your fingertips to compress. Scatter remaining crumbs on top but do not press them down. Bake for about 25 minutes until light golden and cooked through. Transfer to rack to cool.
