Ingredients

    beaten egg

  • 1/2

    cup grated parmesan cheese

  • 1

    cup Italian bread crumbs

  • 2

    boneless skinless chicken breasts

  • 1/4

    cup olive oil

  • 1/4

    cup butter

  • 1

    jar of marinara sauce or pasta sauce

  • mozzarella cheese slices or shredded

Directions

In 2 shallow bowls: beaten egg in one; grated parmesan cheese, Italian bread crumgs, and Italian seasoning. Dip chicken in egg, then in cheese/breadcrumb mixture, turning to evenly coat boh sides of chicken breast. I large skillet: heat oil and butter on medium-high heat.; then add the breaded chicken breasts, turning to brown both sides. Only fry till breast are just about cooked. Then add the marinara sauce to skillet; sort or deglace the skillet with sauce. Then remove skillet and add the mozzarella cheese on top of chicken pieces. Place skillet in oven and heat till cheese is melted and slightly brown. There's enough sauce to serve with pasta and the chicken.
