Ingredients

  • 1 Cup Celery, chopped
  • 1/2 Cup Onion, chopped
  • 1 Cup Orange/Red Pepper, diced
  • 1 Small Jar of Pimentos
  • 1 Can White Corn, drained
  • 1 Can Pinto Beans, drained
  • 1 Can Black Beans, drained
  • 1 Can Black Eyed Peas, drained
  • 1/2 Cup Olive Oil
  • 1/2 Cup Sugar
  • 1/2 Cup Red Vinegar

Preparation

Step 1

Put all the vegetables in a collander and rinse off.

Mix olive oil, sugar and red vinegar in sauce pan and boil.

Cool oil/vinegar mixture and then pour over beans.

Cool for 12 hours and serve with tortilla chips.
