Ingredients
- 1 Cup Celery, chopped
- 1/2 Cup Onion, chopped
- 1 Cup Orange/Red Pepper, diced
- 1 Small Jar of Pimentos
- 1 Can White Corn, drained
- 1 Can Pinto Beans, drained
- 1 Can Black Beans, drained
- 1 Can Black Eyed Peas, drained
- 1/2 Cup Olive Oil
- 1/2 Cup Sugar
- 1/2 Cup Red Vinegar

Preparation
Step 1
Put all the vegetables in a collander and rinse off.
Mix olive oil, sugar and red vinegar in sauce pan and boil.
Cool oil/vinegar mixture and then pour over beans.
Cool for 12 hours and serve with tortilla chips.
