Pan Cakes

A light cake like pie served with Maple Syrup or jams

Ingredients

  • 1 1/4 cups flour
  • 2 Tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg, beaten
  • 1 cup sour milk (or add 1 tsp vinegar to sweet milk)
  • 1 Tbsp vegetable Oil

Preparation

Step 1

Mix the above in a bowl, stir until just damp.

Spoon (using small gravy ladle) onto a hot flat grill, sprayed with Pam. Keep cakes from touching. Brown cakes until tops have bubbles, turn and brown on the other side.

Serve hot with butter and warm Maple Syrup or topping of your choice.

Makes about 9, 5 inch cakes.
