grilled chicken salad with oriental veggies

Ingredients

  • 4 boneless chicken breasts
  • 1/2 lb snow peas, trimmed and cut
  • 1 red pepper, seeded and cut into strips
  • 1 yellow pepper, seeded and cut into strips
  • 1 carrot, peeled and cut into strips
  • 6 oz. white diakon radish, cut into strips
  • 2 scallions, sliced
  • 3 T. rice vinegar
  • 3 T. low-sodium soy sauce
  • 1 T fresh ginger, grated
  • 1 T. honey
  • 1 T. sesame oil
  • cashews(optional)

Preparation

Step 1

Season chicken breasts with salt and pepper and grill until done. Cook snow peas in hot water for 30 seconds. Drain and rinse in cold water. Combine snow peas, red peppers, yellow pepper, carrot, radish, and scallions in large bowl. Prepare dressing in a separate bowl, whisking together soy sauce, rice vinegar, ginger, honey, and sesame oil. Slice chicken and add to vegetables. Pour on dressing and serve over bed of lettuce with little cilantro. garnish with cashews, if desired.
