Ingredients
- 2 onions sliced
- 2-4 tablespoons olive oil
- 3 lbs stew meat ( large chunks)
- 8 oz thickly sliced mushrooms
- 2 -3 tablespoons paprika
- 2 teaspoons salt
- 1 cup hot water
- 16 oz Tomato sauce
- 1 cup sour cream
Preparation
Step 1
Heat in a dutch oven- 2 tbs olive oil over medium high heat
Brown meat in a single layer
May need to add more oil to finish browning meat
When meat is brown- remove and place in dish
Saute onions in drippings til brown ( about 5 minutes)add mushrooms , cook for 2-3 minutes
Add paprika, salt, hot water and tomatoe sauce- combined with a wooden spoon, add beef and stir with a wooden spoon,cover and turn down to simmer for 3 hours or til tender
When finished, place some of the hot liquid in a bowl , add sour cream and whisked til smooth
Add sour cream mixture to goulash and stir with a wooden spoon
Serve with buttered noodles and sweet and sour red cabbag
leftovers can be frozen
