Idea: Jazz it up. Make each piece half chocolate glaze, half white at a diagonal. Serve with lime peel on white and orange on chocolate sides. Or drizzle with caramel sauce and sprinkle with sea salt.

For high altitude, use 16 (or 16 + 1 more white) eggs, 1 1/2 c. sugar minus 1 1/2 Tbsp., little less than 1 tsp. cinnamon, 2 tsp. vanilla. Only beat egg whites to soft peaks.

Ingredients

  • BAUMKUCHEN (Rian – recipe for 8” springform pan – for 10”, I put amounts in ( )s.
  • 10 egg yolks (15)
  • 3/4 cup butter, softened (18 Tbsp)
  • 1 c. granulated sugar (1 1/2 c.)
  • 2 tsp. finely shredded lemon peel (3 tsp.)
  • 1 tsp. cinnamon ( might not increase too much - this is my idea and I have used,
  • but did not measure)
  • 1 tsp. vanilla ( 1 1/2 tsp)
  • 1 c. all purpose flour ( 1 1/2 c.)
  • 1/2 c. cornstarch ( 3/4 c.)
  • 10 egg whites (15)
  • Vanilla Glaze
  • Chocolate Glaze
  • Grated orange rind (opt.)
  • Vanilla Glaze: Combine 2 c. sifted powdered sugar and 1 tsp. vanilla in a small bowl. Stir in enough milk (about 2 Tbsp) to make the glaze of spooning consistency.

Preparation

Step 1

Grease an 8” (or 10”) springform pan.

Beat egg yolks at high speed on electric mixer till thick, about 10 minutes; set aside.

In large bowl beat butter till fluffy; gradually beat in 3/4 c. sugar(make correction if larger batch). Add lemon peel, cinnamon if used, and vanilla. Beat in egg yolk mixture.

In large mixing bowl stir together flour, cornstarch and 1/4 tsp. salt (3/8 ?); stir in butter-egg mixture. Wash beaters.

In a clean bowl, bet egg whites to soft peaks; gradually add the remaining 1/4 c. (or whatever for larger batch) sugar, beating till stiff. Fold into egg yolk batter.

Spread 1/3 c. (I actually just make sure bottom of pan is covered, not thickly – I think it takes a bit more then 1/3 c., but maybe just because I am using larger pan. Place under broiler 5” from heat and broil about 1 minute – (watch carefully and turn pan if browning unevenly – burns really quickly) till light brown. Do not overbrown. Spread another layer on top of first layer and broil as before. Continue spreading and broiling to make 17 layers or so. (If you half again the recipe for a 10” pan and use 8”, would probably get a few more layers.)

Cool in pan 10 minutes. Loosen cake and remove sides of pan. Cool completely. Cut into 8 wedges (or 10) and place on rack over waxed paper. Spread with Vanilla or Chocolate Glazes.
