Ingredients
- 1/2 lb extra sharp white cheddar cheese
- 6 T softened butter
- 1 T kosher salt
- 1/2 t cayenne
- 1 C flour
- 1 egg yolk mixed with ! t water
- 36 sliced almonds
Preparation
Step 1
In food processor, grate cheese. Add butter, salt & cayenne & process til smooth. Add flour & puse until incorporated. Turn dough out onto work surface & knead until smooth.
Divide dough into 36 pieces & roll each piece into 4" finger. Arrange on parchment paper-lined baking sheets & brush with egg wash. Press an almond slice onto end of each finger. Refrigerate til firm, @ 15 min.
Preheat oven to 350. Bake fingers in oven @ 25 min til puffed & golden, shifting pan 1/2way thru baking. Let cool completely; arrange on platter & serve.
