Ingredients
- 2 cups Sugar
- 2 cups Flour
- 2 teaspoon Baking powder or baking soda
- 1 teaspoon Salt
- 3 teaspoon Cinnamon
- 1 1/2 cups Oil
- 4 each Eggs
- 3 cups Carrots ; shredded
- ~~ -- Cream Cheese Icing -- ~~
- 1 stick Butter ; softened
- 8 ounce Cream cheese
- 1 pound Powdered sugar
- 1 teaspoon Vanilla
Preparation
Step 1
Sift first five ingredients into a large bowl. Add the oil and eggs. Fold in the carrots.
Pour the batter into 3 well greased and floured layer cake pans. Bake at 350 degrees for approximately 35 minutes. If sheet pan is used, baking time will change.
For the icing, blend all ingredients until smooth. Optional - add 1 cup chopped pecans or top with chopped nuts.
Cool cake before icing.
