Aunt Linda's Rum Cake

Ingredients

  • 1 cup Butter ; room temperature
  • 1/2 cup Vegetable oil or shortening
  • 2 1/2 cups Sugar
  • 5 each Eggs
  • 3 1/2 cups Flour
  • 1/2 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 cup Milk
  • 1 tablespoon Rum extract
  • 1 cup Pecan ; chopped

  • 1 cup Brown sugar
  • 1/3 cup Water
  • 1/2 cup Butter
  • 2 teaspoon Rum extract

Preparation

Step 1

Cream butter, shortening and sugar. Add eggs, one at a time. Sift together flour, baking soda and salt. Add, alternately to creamed mixture with milk and rum extract. Beat well.

Grease sides and bottom of tube pan with soft butter. Sprinkle bottom of pan with nuts and then a little flour. Add batter.

Bake at 225 degrees for one hour and then 300 degrees until done - about another 45 minutes. Cool and remove from pan.

Glaze:

Boil first three ingredients for 3-4 minutes. Add 2 teaspoons of rum extract. Boil 2 minutes more and then spoon onto cake.
