Ingredients
- Crust:
- 1 cup soft butter
- 1/2 cup icing sugar
- 2 cups flour
- dash salt
- Filling:
- 4 eggs, beaten
- 1/4 cup sugar
- 6 tbsp fresh lemon juice
- grated rind of 2 lemons

Preparation
Step 1
Combine crust ingredients and mix well. Press mixture into 9 x 13 greased pan. Bake at 350 for 15 min or until lightly browned. Combine flour and sugar, mix in beaten eggs, lemon juice and rind. Pour onto slightly cooled crust.
Bake at 350 for 25 min or until filling is set. Cool and sprinkle with icing sugar.
