Citrus Carrots

Citrus, in the form of juices and zest, brighten up carrots and mushrooms to turn this side dish into one worthy of company.

Ingredients

  • 1 (16 oz) package baby carrots
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup chopped mushrooms
  • 1/2 tsp salt
  • 1/8 tsp white pepper
  • 1 tbsp lemon juice
  • 2 tbsp orange juice
  • 1 tsp grated orange zest

Preparation

Step 1

1. Place carrots in a skillet; cover with cold water. Bring to a boil, cover, reduce heat to low, and simmer 3-4 minutes, until crisp-tender. Drain carrots and reserve; return to skillet.

2. Add olive oil to skillet along with garlic and mushrooms. Cook and stir 4-5 minutes, until crisp-tender. Return carrots to skillet along with remaining ingredients.

3. Bring to a simmer; simmer 2-3 minutes or until vegetables are tender. Serve immediately.
