Coconut Cake

  • Coconut Cream Cheese Frosting:
  • 1 pkg. yellow cake mix
  • 1 pkg. (4 oz.) instant vanilla pudding
  • 1 1/3 cup water
  • 4 eggs
  • 1/4 cup oil
  • 2 cups coconut
  • 1 cup nuts
  • 4 Tblsp. butter
  • 2 cups coconut
  • 1 pkg. cream cheese
  • 2 tsp. milk
  • 3 1/2 cups powdered sugar
  • 1/2 tsp. vanilla

Preparation

Step 1

Blend cake mix, pudding, water, eggs, and oil. Beat at medium speed with electric mixer for 4 minutes.
Stir in coconut and nuts. Pour into 3 greased & floured 9-inch round layer pans.
Bake in 350' oven for 35 minutes.
Cool in pans for 15 mins. Remove and cool on rack. Fill and frost with Coconut Cream Cheese Frosting.

Frosting directions:

Melt 2 Tblsp. of the butter in a skillet; add the coconut. Stir constantly over low heat until golden brown. Spread coconut & butter mixture on absorbent paper and cool.

Cream the remaining 2 Tblsp. butter with the cream cheese. Add milk, and powdered sugar; beat well.
Add vanilla. Stir in 1 3/4 cups pf the coconut. Spread on cake and sprinkle the golden brown coconut over frosted cake.
