Arugala prosciutto pizza

Ingredients

  • 1 lb pizza dough at room temp
  • flour and corn meal for dusting
  • 4 t evoo
  • 1 clove garlic, grated
  • 1/2 tsp chopped fresh rosemary
  • salt and pepper
  • 1/2 c part skim ricotta
  • 1 c. shredded mozzarella
  • 4 c arugala
  • 1 small shallot thinly sliced
  • juice of 1/2 lemon
  • 3 oz thinly sliced prosciuotto
  • shaved parm for topping

Preparation

Step 1

1) place pizza stone on balking sheet in oven preheat to 450. roll dough on lightly floured surface into 12" round. transfer to cornmeal dusted baking sheet. slide dough onto hot pizza stone. bake 8 minutes. meanwhile combine 2t olive oil with garlic, rosemary salt and pepper to taste

2) remove pizza from oven, brush with oil mix, top with ricotta and mozzarella. return to oven bake 6 minutes or til cheese bubbles

3) meanwhile toss arugula, shallot, lemon juice, remaining olive oil and salt and pepper. top pizza with arugula salad, prosciutto and parm
