Whole Wheat Pastry Flour Blueberry Pancakes-Totally Vegan

Soft, moist, delicious! Just like M & M's. These pancakes melt in your mouth!

You can substitute blueberries for dried unsweetened peaches or pineapples. They are very tasty!

I don't use maple. The pancakes are savory on their own.
Try them!

Ingredients

  • Dry:
  • 1 cup Whole Wheat Pastry Flour
  • 1/2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/8 tsp Sea Salt
  • Wet:
  • 1 cup of Soy Milk (I prefer Soy Silk - original)
  • 1 Egg Replacer (Mix 2tbs warm water & 1 1/2 tsp egg replacer)
  • 1/2 cup Soy Yogurt (plain)
  • 3 tbs Honey
  • Blueberries (This ingredient makes the recipe PERFECT!)

Preparation

Step 1

In a medium bowl, whisk all dry ingredients (whole wheat pastry flour, baking soda, baking powder, sea salt). Set aside.

In a separate medium bowl, prepare egg replacer. (2tbs warm water to 1 1/2 tsp egg replacer makes 1 egg).

Add the rest of the wet ingredients to egg replacer (soy milk, soy yogurt, 3 tbs honey) .

Add dry ingredients and mix thoroughly.

Add 7 or 8 blueberries to 1/2 cup size batter and pour onto preheated oil-sprayed griddle or skillet and cook until top bubbles.

Flip and cook second side until golden brown.
