Shrimp with Leeks and Linguini

Ingredients

  • 1 lb. large shrimp, peeled
  • 1/4 cup EVOO
  • 1 tbsp. grated lemon peel
  • 2 cloves garlic, grated or finely chopped
  • Salt and pepper
  • 1 lb. fresh linguini
  • 4 leeks, trimmed, halved lengthwise, thinly
  • sliced and washed.
  • 1/2 cup dry white wine or vermouth
  • 1/3 cup finely chopped flat leaf parsley
  • 1/3 cup parm/romano grated cheese

Preparation

Step 1

Cook linguini to al dente.

In a bowl toss shrimp, 2 tbsp. EVOO, lemon peel, garlic. Season with salt/pepper.

In large skillet, heat remaining EVOO (2 tbsp.) over med-high heat. Add leeks, salt/pepper, cook until wilted, about 5 min. Push leeks to the side, add shrimp, cook until pink and firm.

Pour in wine and stir. Add linguini and cheese. Stir and serve.
