Marinated grilled vegetables

Vegetables with a balsamic/herb marinade. Good also with just garlic salt and oil before cooking. Balsamic and sugar may smoke when cooking, but taste good.

Ingredients

  • 2 Japanese eggplant
  • 1 red pepper
  • 2 small zucchini
  • 4 green onions
  • 2 roma tomatos
  • 1 C balsamic vinegar
  • 1/2 c olive oil
  • 3 garlic cloves, miced
  • 1 T minced fresh oregano
  • pinch of sugar
  • salt and pepper

Preparation

Step 1

1. Prep vegetables
Core tomatoes and halve - trim and slice all vegetables into 1/4" thick planks

2. Combine marinade ingredients
Marinate vegetables for 20 minutes

3. Grill vegetables till well marked on each side.
