Oatmeal bread

Ingredients

  • 3 cups king arthur unbleached bread flour
  • 1 cup old fashioned rolled oats
  • 2 T butter
  • 1 1/2 t salt
  • 3 T brown sugar or honey
  • 2 T instant yeast or 1 packet active dry yeast
  • 1 1/4 c lukewarm milk
  • 3/4 cup raisins or currants (optional)

Preparation

Step 1

1. Mix
Combine all ingredients to a shaggy dough. Knead by hand (10 min) or machine (5 min) till smooth. Place in a lightly greased bowl, cover and rest 1 hour - may not double, tho it will become puffy.

2. Shape
Transfer dough to a lightl oiled surface and shape into a log. Place in a lightly greased 9 x 5' loaf pan.

3. Proof
Cover with lightly greased plastic wrap and allow to rise 1 - 1 1/2 hours till crested 1 -2" over the rim of the pan.

4. Bake
Bake in a preheated 350 degree over 35-40 min or till 190 degrees in the center. If browning too fast, shield wiith aluminum foil the final 10 minutes.
