SWEET POTATO CASSEROLE

Ingredients

  • Glaze:
  • 4 sweet potatoes
  • 4 big tblsps of butter
  • brown sugar
  • salt
  • pepper
  • 1/2 cup water
  • Topping:
  • 2 egg whites
  • brown sugar
  • cayenne pepper
  • salt
  • cinnamon
  • chopped pecans

Preparation

Step 1

Wrap potatoes in foil and bake in 400o oven for 45 - 50 mins.
Remove from oven, cool, peel and dice and put in a bowl.

Glaze:
Place butter in pan. When almost completed melted, add brown sugar, salt and pepper . Stir to mix in sugar.
Add 1/2 cup of water. Mix til it becomes syrupy.
Pour over potatoes and transfer to a 9x15 in pan. Mash down a little but don't break up all the potatoes.

Topping:
Lightly beat the egg whites. Add the brown sugar and whip til sugar breaks down. Add a little cayenne pepper.
salt and cinnamon .Beat to liquify. Add the chopped pecans. Pour topping over the potatoes and spread to
cover the top.
Bake in 400o oven for 15 to 20 mins. Serve hot.
