  • 1 lb butter or margarine
  • 21/2 cups sifted icing sugar
  • 5 cups all purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 eggs
  • 3 tbsp vanilla

Cream butter with sugar, beat in vanilla and eggs. Combine flour, soda and salt. Blend gradually into creamed mixture. Divide dough in half, chill if soft as it's easier to handle. Shape each half into a roll about 12 inches long by 2 inches diameter. Wrap tightly in waxed paper, refrigerate several hours. To freeze, overwrap with foil or plastic wrap. ( BASIC DOUGH WILL KEEP FOR 6 MONTHS IN FREEZER. )
TO BARE: Cut chilled dough into slices, about 1/4 inches thick or less. Place on ungreased baking sheet. Bake in preheated 350 degree oven until slightly browned— about 8 to 12 minutes depending on thickness. Cool slightly before removing from pan. then cool completely on wire racks.
If you wish, chill dough without rolling, then shape or roll out dough into desired shapes. If doubling the. recipe, use one 500 g package icing sugar ( about 5 cups ). IDEA! In most ovens, cookies bake best if placed on a rack just above the center of the oven.
COOKIE CAPERS baking plain cookies:
Press any of these toppings lightly into cookie slices or shapes on baking sheet:
1. whole, chopped or sliced nuts
2. sliced gum drops
3. candied cherries, peel or ginger
4. chocolate or butterscotch chips or chocolate wafers
5. crushed candy canes; flat peppermints or other candies.
Start with plain baked cookies:
1 Chocolate frosted— melt chocolate chips, spread on baked cookies and top with nuts. DO THIS FAST AS CHOCOLATE WILL HARDEN SOON.
2. Decorate with decorator frosting piped through a decorating tube or cone of heavy
waxed paper or spread with a knife. Decorate with candies or candied fruit.
Decorator Frosting : to one slightly beaten egg white, add 1 tsp almond
flavoring or lemon juke, blend in enough king sugar to give fairly stiff
consistency. (SHOULD HOLD ITS SHAPE).
3. Stencils — use small cookie cutters or cut designs from cardboard. Spread
cookies with king, place cutter on top of cookies and sprinkle with coloured
sugar or bits of candy inside or outside the cutter.
4. Orange ginger cookies — glaze cookies with mixture of 1/2 cup king sugar, 1 tsp.
grated orange rind and 2 - 3 tsp orange juke. Decorate with candied ginger.
