Mom's Rice Pudding

Ingredients

  • 3 cups Cooked Rice
  • 1 quart Milk
  • 1 teaspoon Vanilla
  • 1/2 cup Sugar
  • 1 tablespoon Butter
  • 2 Eggs ; room temperature

Preparation

Step 1

Combine all ingredients except eggs in saucepan, slowly heat to boiling. Reduce heat and simmer 50-60 minutes. Stir a lot while cooking. Beat eggs till frothy. Slowly add ridce mixture to eggs, folding until well mixed.
