Eileen K's Mini Cheesecakes

Ingredients

• 16 ounce Cream cheese
• 3/4 cup Sugar
• 2 each Eggs
• 1 teaspoon Vanilla
• Vanilla wafers

Preparation

Step 1

Heat oven to 375 degrees.

Put a vanilla wafer in each cupcake paper.

Mix all ingredients in blender. Fill papers with cheese mixture.

Bake for 20 minutes.

Top with fruit.
