Ingredients
- 2 pound Red potatoes ; very small
- 1/4 cup Red wine vinegar
- 3/4 cup Olive oil ; extra virgin
- 1 tablespoon Dijon mustard
- 3 tablespoon Chives
- 1 tablespoon Flat leaf parsley ; chopped
- 1 teaspoon Salt
- Pepper ; to taste
Preparation
Step 1
Cover potatoes with water. Over moderate high heat, bring to a boil. Reduce heat to low, cover and simmer for 15 to 20 minutes, until fork tender. Drain and cool.
Mix dressing. Peel potatoes (optional) and quarter. Pour dressing over potatoes while still warm. Toss.
