Watermelon and Cucumber Salad

Ingredients

  • 1/4 cup White vinegar
  • 1/4 cup Sugar
  • 1/4 teaspoon Red pepper flakes
  • 4 Cucumbers ; peeled, halved, seeded and sliced
  • 8 cups Watermelon ; seeded and cubed

Preparation

Step 1

Combine vinegar, sugar and pepper in saucepan. Bring to a boil; boil for 1 minute. (This can be made ahead of time and put in a small jar and refrigerated for up to 2 weeks.)

Slice cucumbers and toss with 1 teaspoon of salt in a large bowl. Transfer to a colander over the bowl and let stand for 30 minutes. Pat dry. Just before serving, toss melon with 1/2 teaspoon salt. Add cucumber and syrup. Toss and serve.
