This was very good. The flavor was kind of sweet, maybe because I used yellow & red bell peppers instead of green

  • 9 oz. haddock fillets (we used Tilapia) (6 protein)
  • 1 tablespoon olive oil (9 fat)
  • 1 1/2 cups onion, chopped (1 carb)
  • 1 cup green pepper, chopped (1/2 carb)
  • 1 - 14 1/2 oz. can chopped tomatoes (I used the variety with diced peppers & onions (2 1/2 carb)
  • 2 teaspoons arrowroot powder
  • 3 tablespoons fresh parsley, chopped
  • 1/2 teaspoon dried basil
