Meringue Pie Recipes (3)

The light, airy, fluffy topping on meringue pies set them apart from other custard and pudding-filled pies. Whipped egg whites and sugar (and maybe a little vanilla or almond flavoring) are heaped and peaked on the assembled pie and popped in the oven to set and lightly brown the meringue topping. Lemon meringue is the classic, but you will want to sample others such as chocolate, coconut, peanut butter and toffee!
