This goes way beyond the mayo or mustard potato salads of our childhoods. This one is in an Indian spiced yogurt sauce. And it’s packed with chickpeas, tomato and cucumbers!
This is a an easy make-ahead dish that will impress your guests. I’ll be taking a double batch of it this weekend on our annual Labor Day camping trip. The meat eaters will eat it as a side dish and I’ll serve myself a heaping portion for my main course. The only thing that will top it is sitting around the fire with a cocktail!
It’s a wonderful warm weather meal because of the cooling nature of cucumbers and yogurt. Not to mention that if you made it ahead you’re serving it straight from the fridge.
If you have guests or family members who aren’t found of cucumbers, tomatoes or cilantro you can serve them in bowls on the side. While you’re at it you can serve the chili powder on the side too if everyone isn’t keen on spicy food.
