- 10 to 12 ounces collards greens or kale (any variety), stemmed and cut into narrow ribbons
- 15- to 16-ounce can black-eyed peas, drained and rinsed
- 2 tablespoons balsamic vinegar
- Juice of 1/2 to 1 lemon, to taste
- 1/4 cup chopped fresh dill, or more, to taste
- 1/4 cup chopped fresh parsley, or more, to taste

- 2 cups chopped bell pepper (I like to use yellow and orange for color)
- 1/4 cup chopped fresh jalapeno (you can choose the level of heat)

- I tend to add a little salt to mine but remember that the chips will add a good bit of salt
