But wait, let's slow down for a moment. Cheesecake can be a finicky dessert, and it takes particular care to make sure it's smooth, creamy, dense but not heavy, and cooked through without cracking. How do you make sure your hard work is rewarded with a beautiful end result? Here are the top tips you need to know before getting started:

  • Don't skimp on the fat. Cheesecake isn't well-suited to low-fat ingredients. It's all that fat that helps give it that creamy texture and rich flavor. Treat yourself to a little indulgence! It's worth it.
  • Bring everything to room temperature. In order to get that smooth, creamy texture, it's important to bring all ingredients to room temperature before mixing anything together. It's particularly important that the cream cheese be soft before incorporating it, or you'll end up with an uneven texture.
  • Make a water bath. Cheesecake benefits from extra moisture in the oven! Place your springform pan in or above a roasting pan or any large oven-safe dish filled with a couple inches of boiling water (you may want to wrap the outside of the springform in a thin layer of foil to keep the water from getting in). Your cheesecake will thank you with improved texture and less cracking. Just make sure you don't open the oven while baking—it'll let all that moisture out!
  • Stop at the right time to prevent overcooking. Your cheesecake shouldn't be fully set in the middle when you take it out, but should be firm along the sides. When you've achieved this, turn off the oven, but leave the cheesecake inside for another hour while the oven cools. Then you can remove the pan from the oven and cool on a wire rack at least another hour before finally removing the cheesecake from the springform and chilling in the refrigerator for several hours or overnight. If timed perfectly, your cheesecake will not be fully set in the center until it has completely cooled.
