And you can use it to both cook your food and serve it with simple elegance.


Just What Is a Salt Block and Why Should I Cook with It?


Himalayan pink salt blocks are mined from deep within the high mountains of Pakistan. The ancient salt is removed from the mountains in the form of huge boulders. Before the big chunks of salt find their way to your kitchen, they are sliced into slabs, blocks, bricks and plates or sculpted into bowls. Because this salt has been untouched and deep within the earth, unexposed to pollution, Himalayan pink salt may be the cleanest, purest salt on earth. Salt blocks retain heat well and season food evenly because of their density and their efficient heat conduction. They are available in many shapes and sizes and can be used over and over again if properly cared for.


How Am I Supposed to Use This Thing?


Salt blocks hold any temperature well, giving them a variety of uses. Moisture-laden foods pick up more of the salt flavor. You can freeze or chill the blocks to serve cold food, use at room temperature to naturally cure thin slices of salmon or crank them up to 500°F or more to quickly sear steaks, scallops, tuna or vegetables. You can compress and cook a butterflied chicken breast on the grill by placing a heated salt block on top of it. You can even bake on them in the oven if you temper them properly. Follow the instructions that come with your salt block to bring it to the desired temperature gradually - moisture and heating it too fast can cause it to crack. A laser thermometer can tell you when the proper temperature has been reached. You might want t

o consider heat resistant gloves and a holder for your block to protect it from bumps.


Even with proper use, your salt block will get smaller over time, but you can still use it to grate over food or season a pot of soup.


How Should I Clean My Salt Block?


Not in the dishwasher! Unless you want a magically disappearing salt block - the hot water bath of a dishwasher can dissolve it in a single cycle. Instead, Use a slightly moist sponge (the less water the better) and nylon brush or scrubbie to remove stubborn food particles after the block has cooled completely. But avoid rinsing under running water - that will send some of your salt block down the drain. Your salt block has natural anti-microbial properties, so don’t use soap. Just wipe, scrub lightly if needed and repeat until clean. There are plastic scrapers that are effective in removing extra-stubborn globs. Pat dry with a paper towel and allow it to air dry for 24 hours before next use.
