Asian Carrot Radish Slaw

Another delicious and healthy raw salad.

Yields: 8 servings

2 carrots, grated
1 turnip, grated
1 beet, grated
1 savoy or napa cabbage, chopped
1 bunch radishes, chopped or grated
1 leek sliced and diced
1" chunk fresh ginger, minced
2 shallots, chopped
1/4 C rice vinegar
1 Tbsp soy sauce
1 Tbsp red miso
2 Tbsp sesame oil
2 Tbsp grapeseed oil
1/8 tsp salt
1/4 C water

Blend dressing ingredients in blender and pour over all salad ingredients. Toss and serve. Best eaten immediately.
