| 2 | carrots, grated |
| 1 | turnip, grated |
| 1 | beet, grated |
| 1 | savoy or napa cabbage, chopped |
| 1 | bunch radishes, chopped or grated |
| 1 | leek sliced and diced |
| 1" chunk fresh ginger, minced | |
| 2 | shallots, chopped |
| 1/4 | C rice vinegar |
| 1 | Tbsp soy sauce |
| 1 | Tbsp red miso |
| 2 | Tbsp sesame oil |
| 2 | Tbsp grapeseed oil |
| 1/8 | tsp salt |
| 1/4 | C water |
Blend dressing ingredients in blender and pour over all salad ingredients. Toss and serve. Best eaten immediately.
