Butternut Squash and Sage Soup

Ingredients

  • sprinkle of olive oil
  • 1 large yellow onion
  • 2 butternut squashes, peeled, seeded and cut into 1 inch cubes
  • 2 tbsp chopped fresh sage
  • 4 cups veggie broth
  • Salt Pepper

Preparation

Step 1

1) In a large pot, heat olive oil over med. heat. Add onion and cook until translucent, 8-10 min. Add squash, cook 5 more minutes. Add chopped sage and broth, bring to a boil, reduce heat to med low and cook 30 minutes or until squash is really tender. With an immersion blender, puree soup until smooth. Season with salt and pepper.
