Gluten-Free Soft Lemon Bites
Soft and lemony cookies
Ingredients
| ⅔ | cup white rice flour |
| ⅓ | cup potato starch |
| ⅓ | cup tapioca flour |
| 3 | TBSP almond meal |
| ⅔ | cup sugar |
| ½ | tsp sea salt |
| ½ | tsp baking soda |
| ½ | tsp xanthan gum |
| ¼ | tsp pure lemon extract |
| 1 | large egg |
| 3½ | TBSP melted butter |
| 1½ | TBSP apple sauce |
| 2 | TBSP milk |
| Almond-Sugar Coating: | |
| 1½ | TBSP melted butter |
| ¼ | cup almond meal |
| ⅛ | cup powdered sugar |
| ¼-½ | tsp cinnamon |
Directions
Preheat oven to 375
Combine all flours, almond meal, baking powder, sugar and salt.
In a small bowl, mix egg. Combine with melted butter, apple sauce and milk. (The apple sauce is what makes them soft :).
Use a medium sized cookie scoop to scoop cookie dough onto a baking sheet.
For almond-sugar coating:
Sombine almond meal, powdered sugar, and cinnamon in a small bowl.
Use a pastry brush to lightly coat each cookie in butter, now sprinkle with the almond-sugar coating.
Bake in a preheated oven at 375 for 15-18 minutes. Allow cookies to cook completely before eating :).
