Cider Chicken
A wonderful fall chicken recipe. Works well with pork too.
Ingredients
| 1 | quartered chicken |
| 1 | cup apple cider |
| ½ | c cup flour |
| 1 | tsp ground ginger |
| 1 | tsp cinnamon |
| salt and pepper | |
| 2 | Tbsp. brown sugar |
| 1 | apple cored, sliced |
| 2 | Tbsp. honey |
Directions
Marinate chicken in cider for one hour. Remove the chicken, reserving the cider. Mix flour and spices in and spices in a small bowl. Dredge chicken in the mixture. Place skin side up, in a shallow baking dish. Bake at 350 F for 40 minutes.
Combine the cider, brown sugar and apples. Pour this mixture over the chicken and bake an additional 20 minutes.
