Ingredients

  • 2 tbsp Olive Oil
  • 1 Carrot, peeled and chopped
  • 1 Onion, chopped
  • 2 (14oz) can Diced Tomatoes
  • 16 oz Chicken Broth, homemade preferred
  • 1 cup Fresh Basil Leaves, torn into pieces
  • 2 tbsp Tomato Paste
  • 2 Bay Leaves
  • 2 Chicken Breasts with ribs, (about 1-1/2 lbs)
  • 2 (15oz) cans White Kidney Beans, rinsed and drained
  • Salt and pepper, to taste

Step 1

Heat the oil in a deep pan over medium heat. Add the carrots and onion, stirring for about 5 minutes.

Add tomatoes with the juice, chicken broth, tomato paste and bay leaf. Add chicken and submerge in the liquid.

Bring to a boil. Cover and reduce to a simmer until chicken is cooked through, about 25 minutes. Turn the chicken over part way through.

Remove the chicken and place on a cutting board and let sit for a few minutes before shredding.

Remove the bay leaf, and add the beans to the stew.

Remove the skin and bones from the chicken and shred or chop the chicken. Place back in the pot, stirring to combine everything.

Bring back to a simmer before serving.
Season with salt and pepper.
