  • 4 large sweet onions, such as Vidalia
  • 2 1/2 cups flour
  • 1/3 cup cornstarch
  • 6 teaspoons paprika
  • 4 teaspoons garlic powder
  • 1 teaspoon salt
  • 1 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 24 ounces beer
  • 1 gallon of corn or soy cooking oil
  • 1/2 cup mayonnaise
  • 2 tablespoons cream-style horseradish sauce
  • 1 tablespoon ketchup
  • 1/3 teaspoon paprika
  • 1/3 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • Dash black pepper
  • 1/8 teaspoon oregano

Step 1

Heat the oil in a deep fryer or large deep pan to 375 degrees

Peel the onions and slice off the root on one end only. Make 12 to 16 vertical cuts into the open end of the onions, making sure not to cut all the way through. Start by slicing through the center, then turn the onion and continue to slice all the way around. Leave about one inch of un-cut onion near the intact root. Peel back the onion petals slightly, but do not remove them from the onion.[9]

Combine two cups flour, four teaspoons paprika, two teaspoons garlic powder, 1/2 teaspoon pepper, and 1/4 teaspoon cayenne pepper in a large plastic bag. Add the onions to the bag and shake to coat in the seasoned flour.

Mix the remaining flour, cornstarch, paprika, garlic powder, salt and pepper in a large mixing bowl. Stir in the beer.

Tap the floured onions to remove excess flour. Dip the onions into the batter to coat well. Allow excess batter to drip away.

Carefully place the onions in the hot oil. Allow to fry for about 90 seconds, then turn it over and cook for another 90 seconds or until golden brown.

Place on paper towels to drain. When cooled, remove the center portion of the onion petals, if desired, to create a space for the dipping sauce.

Bloomin' Onion Dipping Sauce:

Combine the mayonnaise, horseradish sauce, ketchup, paprika, cayenne pepper, salt, pepper and oregano in a small bowl. Mix until well combined.

Spoon into a small serving dish or cup. Place the cup of dipping sauce into the center of the cooked bloomin' onion.
