|2||cups sugar (may cut the sugar to 1 to 1½ cups as it is very sweet)|

|2||tsp. baking soda|
|1||can (20) oz. crushed pineapple, undrained use pineapple in own juice.|

|1¾||cup powdered sugar|
CAKE: Combine dry ingredients; add remaining ingredients and mix by hand. Bake in a 9X13 prepared pan at 350 degrees for 45 minutes. Some people have mentioned that the cake was done in 30 minutes. Check your cake at 30 minutes and make any adjustments in the cooking time from there. FROSTING: Combine all ingredients and mix well. spread on cake in pan. note: There is not milk, butter or oil in the cake. You may add other fruits of coconut is you like. Some other suggestions are: dried cranberries, raisins, currants, dried fruit, and fresh blueberries. I suggest that you cut the sugar to 1 cup, as this recipe is quite sweet. if you would like to save calories, instead of using the frosting, just sprinkle top of cake with a bit of powdered sugar.
