| Both breasts of rotisserie chicken - or any leftover chicken meat shredded or diced | |
| 1 | Tablespoon fresh thyme |
| 1/2 | teaspoon poultry seasoning (this makes it taste just like Thanksgiving) |
| 3-4 | sliced green onions |
| 1/4 | cup yogurt plain |
| 1/4 | cup mayonnaise |
| salt and pepper | |
| 1/2 | cup dried cranberries |
Mix all ingredients together and let sit for about 1/2 hour (in the fridge). I like this on top of greens, in a sandwich, or next to my beautiful sweet potatoes. It’s just one of many chicken salads that I toss together, but it truly is like Thanksgiving in your mouth.
