  • 1 small zucchini
  • 2 T + 1 t white whole wheat flour
  • 1 large egg white
  • 1/2 t baking powder
  • 1/4 t salt
  • 1 t canola oil
  • fat-free sour cream

Step 1

Grate 1 small zucchini in bowl. Stir in 2 T plus 1 T white whole weat flour, egg white, baking powder and salt until well mixed. Heat 1 t canola oil in large nonstick skillet over med-high heat. Crop batter into skillet, making total of 3 pancakes. Cook until browned, 2-3 minutes per side. Serve with 2 T fat-free sour cream.
