Who says vegans don't have any fun? This sauce is luxurious, thick, and creamy...and you won't miss the cheese at all. Try it with nachos and salsa, poured over grilled vegetables, or as a creamy pasta sauce. Or you know, you can always spoon feed it to yourself like someone I know.

Ingredients

  • 3/4 cup raw cashews
  • 1/2 cup vegetable broth
  • 2-3 garlic cloves, to taste
  • 2 tbsp fresh lemon juice
  • 1/2 cup nutritional yeast
  • 2 tsp Dijon mustard
  • 1/4 tsp onion powder (optional)
  • 1.5 tsp kosher salt , or to taste
  • Freshly Ground black pepper & your desired dried or fresh herbs

Preparation

Step 1

Add cashews into food processor and process until fine crumb. Be careful not to over-process and release the oils. Now add in the rest of the ingredients, to taste, scraping down the sides of the bowl as necessary.
