Ingredients

  • 2 Cups cooked chicken breast cut into small pieces
  • dash PENZEYS CINNAMON
  • dash GROUND CLOVES
  • dash CAYENNE PEPPER or BERBERE
  • 1 TB. olive oil
  • 1/4 Cup orange juice
  • 1/4 Cup raisins
  • 1 tsp. red wine

Preparation

Step 1

In a small bowl, combine the CINNAMON, CLOVES and CAYENNE or BEREBERE. Sprinkle the chicken pieces with the spice mixture. In a large skillet heat the oil over medium heat. Add the chicken and brown for a few minutes. Slowly add the orange juice, raisins and wine and stir to thoroughly coat the chicken. Since the chicken is already cooked, you are just looking for the flavors to blend, 3-5 minutes. Serve on a bed of couscous.
