Ingredients
- 1 tbs olive oil
- 1 small onion halved and thinly sliced (1/2 cup)
- 6 oz. cremini mushroom slices ( 2 cups)
- 2 miniature red sweet peppers stemmed and sliced ( 1/2 cup)
- 1 32 oz container mushroom or beef broth
- 1 20 oz package of frozen beef ravioli
- Fresh thyme
- Ground black pepper

Preparation
Step 1
In 4 ct. Dutch oven heat olive oil over medium heat. Add onion slices, mushrooms, and sweet peppers; cook and stir 4 minutes or until tender. Stir in broth, bring to a boil. Stir in ravioli return to boil. Reduce heat. Cook, uncovered, 5 - 8 minutes or until pasta is tender. Sprinkle with thyme and pepper before serving.
