Use your favorite cupcake recipe (this one is lime) and layer with a fresh strawberry sauce to make a cupcake mountain!
| 1 | dozen cupcakes, cooled |
| Fresh Strawberry Sauce | |
| 1 1/2 | cups fresh strawberries, cleaned, stemmed, and chopped |
| 1/2 | cup water |
| 1/4 | cup sugar |
| 1 | T. arrowroot or cornstarch (arrowroot will not cloud the berries) mixed with 2 T. water |
Prepare your favorite cupcakes. I made lime flavored cupcakes by adding a tablespoon of lime zest to a vanilla cupcake recipe.
Prepare Strawberry Sauce:
Combine strawberries, sugar, and water in a medium pan. Bring to a boil and simmer until soft, about 3 minutes. Remove from heat and mash with a potato masher or puree with an immersion blender. Return to heat and bring to a simmer. Add arrowroot mixture and continue simmering, stirring constantly, for 2 minutes. Remove from heat and let cool to room temperature. Chill at least one hour in the refrigerator.
Slice cupcakes into thirds. Put the top of the cupcake upside down onto a small plate. Top with some of the sauce. Place the middle layer next and top with sauce. End with the bottom layer, cut side down. Top with more sauce and a whole berry.
