3 Bean 2 Nut Salad PRINT

3 Bean 2 Nut Salad
  • YIELD: 4 servings

My family enjoys this Italian style protein-packed salad all year round, but especially during the hot Texas summers. We now call it 3-2-1 Salad, 3 Bean, 2 Nut, 1 Great Salad!

Ingredients

1 (15 oz.) can red beans, drained & rinsed
1 (15 oz.) can white beans (garbanzo or cannelini), drained and rinsed
½ lb. fresh cooked green beans, cut into 1 inch pieces
2 green onions, sliced
1 small or half of a large red bell pepper, chopped
½ cup shredded carrots
2 tablespoons (about 8 pieces) sundried tomatoes, hydrated and chopped
cup sliced almonds, toasted
cup chopped walnuts, toasted
juice of 1 lemon (1-2 tablespoons)
3 T. Italian style salad dressing
2 T. chopped fresh parsley
salt and pepper to taste

Directions

Mix all ingredients together in a large bowl and serve.
