My family enjoys this Italian style protein-packed salad all year round, but especially during the hot Texas summers. We now call it 3-2-1 Salad, 3 Bean, 2 Nut, 1 Great Salad!
| 1 | (15 oz.) can red beans, drained & rinsed |
| 1 | (15 oz.) can white beans (garbanzo or cannelini), drained and rinsed |
| ½ | lb. fresh cooked green beans, cut into 1 inch pieces |
| 2 | green onions, sliced |
| 1 | small or half of a large red bell pepper, chopped |
| ½ | cup shredded carrots |
| 2 | tablespoons (about 8 pieces) sundried tomatoes, hydrated and chopped |
| ⅓ | cup sliced almonds, toasted |
| ⅓ | cup chopped walnuts, toasted |
| juice of 1 lemon (1-2 tablespoons) | |
| 3 | T. Italian style salad dressing |
| 2 | T. chopped fresh parsley |
| salt and pepper to taste |
Mix all ingredients together in a large bowl and serve.
