This orzo and wild rice salad is super versatile; it goes great next to lemon-pepper tilapia or a salmon fillet, even paired with grilled chicken.

Ingredients
- SALAD:
- 2 cups cooked orzo
- 1 cup cooked wild rice
- 3 tablespoons diced red onions
- 3 tablespoons currants
- 2 tablespoons corn niblets
- 3 tablespoons each, red, green and yellow pepper
- 2 tablespoons fresh chopped basil
- salt and pepper to taste
- 1/4 cup chopped parsley
- Cook the orzo and wild rice according to package directions. Add all remaining ingredients including the dressing and chill well
- Dressing ingredients
- 1/4 cup canola oil
- 1/4 cup olive oil
- 1/8 cup white balsamic vinegar
- 1 1/2 tablespoons honey
- 1/4 tablespoon dijon mustard
- 1/4 teaspoon minced garlic
- 1/8 teaspoon pepper
- 1/2 tablespoon chopped fresh basil
- Place all ingredients in a bowl except for the oil, Stir to blend, then add the oil, slowly and whisking vigorously to blend.
