J. Alexanders Orzo and Wild Rice Salad

This orzo and wild rice salad is super versatile; it goes great next to lemon-pepper tilapia or a salmon fillet, even paired with grilled chicken.

Ingredients

  • SALAD:
  • 2 cups cooked orzo
  • 1 cup cooked wild rice
  • 3 tablespoons diced red onions
  • 3 tablespoons currants
  • 2 tablespoons corn niblets
  • 3 tablespoons each, red, green and yellow pepper
  • 2 tablespoons fresh chopped basil
  • salt and pepper to taste
  • 1/4 cup chopped parsley
  • Cook the orzo and wild rice according to package directions. Add all remaining ingredients including the dressing and chill well
  • Dressing ingredients
  • 1/4 cup canola oil
  • 1/4 cup olive oil
  • 1/8 cup white balsamic vinegar
  • 1 1/2 tablespoons honey
  • 1/4 tablespoon dijon mustard
  • 1/4 teaspoon minced garlic
  • 1/8 teaspoon pepper
  • 1/2 tablespoon chopped fresh basil
  • Place all ingredients in a bowl except for the oil, Stir to blend, then add the oil, slowly and whisking vigorously to blend.
