Ingredients
- 1/2 cup softened butter or margarine
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups flour
- 2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup milk
- 1 and 1/4 cups flaked coconut

Preparation
Step 1
In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each egg. Beat in vanilla. Combine the flour, baking powder and salt, add to creamed mixture alternately with milk. Stir in coconut.
Pour into a greased 9 x 5x3 loaf pan. Bake at 350 for 1 hour or until pick inserted comes out clean. Cool 10 min before removing from pan to wire rack to cool completely.
