Rhubarb Crumble Pie
Ingredients
| 1 | crust pie crust, unbaked |
| Filing: | |
| 6 | cups rhubarb |
| 1-⅓ | cup sugar |
| ¼ | cup flour |
| 1 | teaspoon cinnamon |
| 1 | egg, beaten |
| Topping: | |
| ½ | cup brown sugar |
| ½ | cup flour |
| ¼ | cup melted butter |
Directions
Prepare pie crust. I like to use Dorie Greenspan’s “Good for Almost Anything” pie crust recipe.
Mix rhubarb, sugar, flour, and cinnamon together. Fold in beaten egg. Pour into unbaked piecrust. Set aside.
Mix brown sugar, flour, and melted butter. Crumble over top of pie.
Place in 400 degree oven and bake for 50-60 minutes or until set.
