Ingredients
- 1 tbsp plus 2 tsp olive oil
- 1/2 lb. lean ground beef
- S & P
- Several dashes Worchestershire Sauce
- 1/2 small onion – chopped
- 1/2 small pepper, finely chopped
- 1/2 small tomato, seeded and finely chopped
- 8 large eggs
- 4 thin slices American or swiss cheese

Preparation
Step 1
Warm 1 tbsp oil in skillet oer med. Heat. Add beef, season with s & p, and worches. Sauce. Saute, breaking up beef until cooked . Scoop into bowl with slotted spoon, leaving juices in skillet. Add onion to skillet, season with salt and sauté 2 min. Add bell pepper and cook 4 minutes. Add tomato and cook 1 min. Stir veggies into beef. Crack eggs into small bowl and beat with 2 tblp water, season with s & p. Add ½ tsp oil in skillet. Add eggs o pan and immediately pull edges o center. Keep tilting pan until eggs are done. Fill center with beef mixture. Cover with sides of egg mixture. Immediately top with cheese, cover with lid until cheese melts.
